Have you ever had a dessert so simple yet so delicious that you couldn’t stop thinking about it? That’s exactly what happened to me when a friend handed me a cheesecake-stuffed strawberry during a coffee date. One bite, and I was hooked! The combination of fresh, juicy strawberry and sweet, creamy cheesecake filling was pure bliss—like a little cheesecake in my mouth. Days later, I was still dreaming about them, so of course, I had to make my own!
These cheesecake-stuffed strawberries are ridiculously easy to make with just a handful of ingredients: fresh strawberries, cream cheese, powdered sugar, and vanilla extract. That’s it! If you want to get fancy, you can top them with graham cracker crumbs for that classic cheesecake vibe or sprinkle on some mini chocolate chips for a little extra indulgence. But honestly? They’re incredible all on their own.

Now put on a cute apron and let’s make a treat to share!
I make this in a small batch, but the recipe is easily doubled for a larger batch. I always ended up with a ton of leftover filling, so I didn’t want to waste it (and the amount of times I went to the fridge for a spoonful of the leftover cheesecake filling was not good for my health).
Why You’ll Love These Cheesecake-Stuffed Strawberries
- Simple ingredients – You probably already have everything on hand… assuming strawberries are in season.
- No baking required – Perfect for warm days when you don’t want to turn on the oven.
- Quick to make – Ready in just minutes.
- Light yet satisfying – A perfect balance of fruity freshness and creamy richness.
- Great for any occasion – Serve them at parties, brunches, or as a fun treat just because!
How to Make Cheesecake-Stuffed Strawberries
There is a printable recipe card at the bottom of this post with detailed instructions and measurements. However, I need to see what things look like to know that I’m doing it right, so I’ve provided step-by-step images to help you out.
Ingredients:

- Fresh strawberries- When these are in season, they are natures candy. I love anything strawberry.
- Cream cheese, softened- you can use Neufchâtel for a lower fat option or a plant based cream cheese for a dairy-free or vegan option.
- powdered sugar- I haven’t tried any substitutes for the sugar
- vanilla extract- try flavoring it with maple or almond extract (use less of this as it tends to produce a stronger flavor)
- (Optional) Graham cracker crumbs or mini chocolate chips for topping
Instructions:

Wash the strawberries (I soak them in 1 part white vinegar and 3 parts water for about 5 minutes and then rinse them with water) and pat them dry.

Using a paring knife or huller, hull the strawberries by cutting out the stems and a small portion of the center to create a little pocket for the filling.
***bonus: Save the stems in a jar and cover them with apple cider vinegar to sit overnight. After about 24 hours, strain it and you will have the best strawberry vinaigrette ever. That way you are not wasting anything and you get to enjoy REALLY delicious salad dressing!I love it mixed into my easy cucumber salad.

In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Transfer the cheesecake mixture into a piping bag (or use a zip-top bag with the corner snipped off). I like to put the bag in a glass for easy filling.

Pipe the filling into each strawberry.

If desired, sprinkle graham cracker crumbs or mini chocolate chips on top.
Serve immediately or chill for 15-30 minutes before serving for an even creamier texture.
A Few Tips for the Best Cheesecake-Stuffed Strawberries
- Use ripe but firm strawberries – You want them juicy but sturdy enough to hold the filling.
- Soften the cream cheese properly – This ensures a smooth, easy-to-pipe filling.
- Make them ahead – They hold up okay in the fridge for a few hours, making them a good make-ahead treat! Just be careful how you store them in the fridge so they don’t fall all over the place… which leads to the next tip.
- Cut the bottoms– If you cut a little bit off the bottom, they will stand up on the plate (although… I like as much strawberry as I can get and presentation doesn’t matter as much as taste to me).
A Sweet Treat for Any Occasion
Cheesecake stuffed strawberries are the kind of dessert that feels fancy but requires almost no effort. Whether you’re making them for a get-together, a romantic dinner, or just a treat for yourself, they’re guaranteed to impress. Plus, they’re a perfect way to enjoy the flavors of cheesecake without the hassle of baking an entire cake.
Give them a try, and don’t be surprised if you find yourself thinking about them for days afterward—just like I did!
