This Easy, no-bake Rocky Road Mousse Pie is a simple, creamy dessert that comes together in no time! Put together in a pre-made chocolate cookie crust, this pie is the perfect blend of chocolatey goodness and fun textures. Whether you’re bringing it to a friend’s house or serving it at a gathering, this fuss-free dessert is sure to impress and satisfy every sweet tooth!
How This Recipe Came to Be
When I was first living on my own, a sweet friend taught me some easy dishes I could make. Cooking did NOT come naturally to me, but I really wanted to be more domestic. She showed me how to make a simple cocoa mousse pie, and it quickly became my go-to dessert whenever someone asked me to bring a treat.
One day, my husband casually asked, “Do you think you could add almonds, marshmallows, and chocolate chips—like Rocky Road?”
Brilliant! Why didn’t I think of that before?
And just like that, this Rocky Road Mousse Pie was born. It’s now my favorite dessert to bring to a friend’s house for dinner. Plus, it’s super easy to transport—thanks to the pre-made crust that comes with a lid and everything!

How to Make Rocky Road Mousse Pie
Full measurements and step-by-step instructions are in the printable recipe card at the bottom of this post. I’ll also include images to guide you through the process!
Ingredients and Substitutions:

This recipe is best when you make it exactly as it is written. If you just want a simpler Cocoa Mousse Pie, leave out the nuts, chocolate chips, and marshmallows.
- Premade chocolate pie crust– You can make your own, but that adds extra steps. For beginners (or busy people!), the store-bought version is super convenient and makes transporting the pie easy. A gluten-free version is available, though it tends to crumble more. Still delicious, though!
- Cool Whip– If you prefer homemade whipped cream, go for it! But this recipe is designed to be quick and easy. You can find a plant based version for your vegan or dairy-free friends.
- Cream Cheese– This adds a rich, creamy texture. I don’t recommend skipping it, but there is a dairy-free version of this as well if needed.
- Unsweetened cocoa powder– You could melt about ½ cup of chocolate chips instead, but that requires extra steps. Cocoa powder gives great flavor with minimal effort.
- Milk– Any kind works, including non-dairy options. I’ve also had success using half-and-half for a richer texture.
Step-By-Step Instructions
1. Make the Mousse Filling
In a large bowl, use a hand mixer to blend the softened cream cheese, cocoa powder, sugar, milk, and vanilla until smooth. (Trust me, a hand mixer makes this much easier!)

2. Fold in the Mix-Ins
Gently fold in the Cool Whip, followed by the chopped almonds, mini chocolate chips, and mini marshmallows. The almonds and chocolate chips add a nice crunch, while the marshmallows bring the classic Rocky Road texture.

3. Assemble the Pie
Pour the mixture into the pre-made cookie crust and smooth it out evenly.

4. Add the Toppings
For the best Rocky Road look, sprinkle extra mini chocolate chips, sliced almonds (they’re prettier than chopped ones), and mini marshmallows on top.

5. Chill Before Serving
Cover the pie with the plastic lid that came with the crust and pop it into the freezer for at least 30 minutes, or up to 3 days.

6. Serve & Enjoy!
When you’re ready to serve, take the pie out of the freezer. If you prefer a softer texture, let it sit for about 15 minutes. Personally, I love it straight from the freezer! Your friends and family will love this creamy, crunchy, chocolatey treat.

Yes! This pie can be made up to 3 days in advance and stored in the freezer. Just take it out 15 minutes before serving if you prefer a softer texture.
Yes! You can substitute homemade whipped cream (about 2 cups whipped), but keep in mind that Cool Whip has stabilizers that help the pie hold its shape longer.
Simply use a gluten-free chocolate pie crust, which is available at most grocery stores. The rest of the ingredients are naturally gluten-free!
Yes! Swap out the cream cheese, Cool Whip, and milk for dairy-free alternatives, and use a dairy-free chocolate crust.
Cover the pie with the included plastic lid and store it in the freezer for up to one week. You can also keep it in the fridge if you prefer a softer consistency.
