I love smell of churros, but they never taste as good as they smell. That’s why I created these Easy Snickerdoodle Blondies to share with friends. These delicious bars taste like a churro smells… with a little bit of a cinnamon toast crunch vibe. These blondies are a hit for any group gathering.

It’s become my go-to for an easy treat to whip up and take along to a gathering, or to make at home and eat the whole pan. Don’t judge me, they are too good. I can’t control myself.

Pin it for later

First things first… put on a cute apron, and let’s get baking!

You can whip these simple blondies up easily with common ingredients that are probably hiding in your pantry just waiting to be used. You may need to run out for (or order) some ground cardamom, but once you have that you’re good to go… and you will want to use it in everything! Trust me.

Pro tip: Add a half teaspoon of cardamom and half teaspoon of cinnamon to a batch of chocolate chip cookies… you’ll thank me later!

Ingredients:

The amounts are in the recipe card at the bottom of this post.

Image of label ingredients. The text reads: flour, cardamom, cinnamon, cream of tarter, baking powder, melted butter, 1 whole egg + 1 yolk, brown sugar, sugar, and vanilla extract
  • butter
  • brown sugar
  • granulated sugar
  • eggs
  • vanilla extract
  • all purpose flour
  • baking powder
  • cream of tartar
  • cinnamon
  • cardamom

This recipe is best as it is written, but a few substitutions can be made.

  • Flour— I use all-purpose flour, but have used bread flour when I ran out. It still turned out delicious. For a gluten-free option, you can use 1 to 1 Gluten Free Baking Flour. I have tried it with Bob’s Red Mill brand. It produces a grittier texture, but still tastes fantastic… especially if you don’t have the gluten-full version right next to it to compare.
  • Cardamom— Don’t leave this out. It is the secret ingredient that makes everyone say, “WOW, these are delicious!”
  • Butter— For a dairy free version, I have used Earth Balance Vegan Buttery Sticks with great success.

Really… that’s all I can think of to substitute. I haven’t tried any egg alternatives yet, so I’ll let you know when I do, or you can do it for me leave a comment. 🙂

How to Make Easy Snickerdoodle Blondies

  • First, preheat your oven to 350 degrees Fahrenheit.
  • Next, cover an 8X8 baking pan with foil. Metal pans cook them faster. When I use a glass pan, they come out more goey. Foil is most effective for removing the snickerdoodle blondies easily from the pan and cutting them into equal squares. You can use parchment paper or a plain ol’ pan if you want, but I can’t seem to get them out of those without smooshing them. The foil is my friend.
  • Then, spray a generous amount of cooking spray to grease the sides and bottom of the pan.
8x8 pan is on a table covered in aluminum foil. It has been sprayed with nonstick spray on the sides and bottom of the pan.
  • In a medium bowl, mix flour, baking powder, cream of tarter, cinnamon, and cardamom. Whisk it together until it is combined and set it aside.

Please note:

As it mixes together it will stir up the aroma of cardamom. Undoubtably, you will start to imagine all the other things you want to try adding cardamom to. For example, cardamom is delectable in coffee, and coffee goes great with these snickerdoodle blondies. I also add 1/2 tsp. to my chocolate chip cookies. Just saying…

  • Now, heat your stick of butter in the microwave for 30 seconds. It doesn’t melt completely and that is okay. In a mixing bowl (I use a Kitchen Aid Mixer with a paddle attachment) cream together butter, brown sugar, and granulated sugar until it is combined.

  • Then, add your whole egg plus one egg yolk and vanilla extract.
Bowl with added eggs and vanilla
Image shows eggs and vanilla mixed in. It has a creamy texture.
  • Next, dump the flour mixture into the wet ingredients. Incorporate all the flour in to the wet stuff. It will kind of turn into a blob.
The flour has been dumped on top of the creamy mixture in the bowl.
The image shows the batter in the bowl has been mixed. There is a spatula in the bowl.
  • Plop that blob of goodness into your foil covered, nonstick sprayed 8×8 pan. Use a spatula to spread it out evenly, covering the inside of the pan. Sometimes I put a little butter or spray on the spatula so it doesn’t stick. So, Don’t worry about a perfectly smooth top, though. The sugary goodness covers the top. That’s what makes these easy snickerdoodle blondies so delicious!
This is an image of the blondie batter in the pan. A spatula is being used to press it out to fill the entirety of the pan.

***Quick trick: if you can’t get anything to NOT STICK… use the butter wrapper. It won’t stick and you can really press it in there! That thing comes in handy.

This image shows a person using the paper that the butter is wrapped in to press down the easy snickerdoodle blondies in the pan.

How to make the topping

  • Mix sugar, cinnamon, and cardamom in a small bowl. I used a tiny bowl for this that only holds about a cup of sugar. Indeed, it looks like more here than it actually is.
Side by side images. On the left is sugar with cardamom and cinnamon dumped in. The image on the right shows it all mixed together.
  • Sprinkle the sugar mixture over the blondies. Be sure to cover the whole surface. This is a big part of the snickerdoodle/churro/cinnamon toast crunch flavor that your guests will rave about!
  • Bake for 20-25 minutes. The edges will start to pull away from the sides. The top will start to feel firm and a toothpick should come out clean. However, It’s okay if they are a little goey… they are blondies after all. Blondies should have a brownie type texture. They firm up a little bit as they cool.

  • Take the foil out of the pan with the blondies on it. then, Let them cool and cut into 16 squares.

  • Pour it into prepared 8×8 pan.

  • Use a spoon to evenly spread the sugar mixture over the top of the blondies. Be sure to cover every bit of it.

Notes

A glass pan causes the blondies to come out more goey. A metal pan cooks faster.

I LOVE this recipe! It cuts down on the work of having to cover all the cookies individually and tastes just as good as a Snickerdoodle cookie! I love how moist these bars are.
